I call them tomato basis bombs because of the sharp flavours that explode in your mouth as you eat them. A very quick and easy recipe to assemble on the fly if needing a quickie appetizer for a dinner party or potluck. They are healthy and eye catching and you’ll be sure to gather compliments when people find out it was your tasty creation they are eating up one after another.
What you need:
Small Cherry Tomatoes
Fresh Basil Leaves
Mozzarella balls / Feta cubes / Bocconcini
Toothpicks or skewers
Olives – optional
1/4 cup olive oil
1 to 1 1/2 tbsp balsamic vinegar
How To:
Put one of each ingredient on the toothpick or skewer and serve. Drizzle with oil & balsamic vinegar or have as a side dish for dipping.
