These soft cookies are amazing. A full blast of peanut flavour, but without all the other crap cookies are known for including butter, white sugar and flour. These babies only take me 15 minutes from start to finish to make & bake. A great quick grab if you’re on your way to a potluck and want to keep it healthy!
Just a reminder that peanuts are a very absorbent nut, so any chemicals or pesticides in the growing area will be readily sucked up by these tasty little nuts, making them toxic and unhealthy. Organic peanut butter is the ONLY way to go. Be sure to keep it refrigerated as well, as it can become rancid quickly on the shelves. Here is your chance to break yet another bad habit probably learned from our mothers. Go ahead, splurge a little if organic costs more — you’ll nourish your health, not toxify it.
Pre-heat oven to 350F
What you need:
- 1 cup Organic Peanut Butter
- 1 egg
- 1/2 cup honey or 2/3 cup Succant or Coconut Palm Sugar
How To:
- Mix all together in a bowl.
- Spoon onto a cookie sheet covered in parchment paper.
Bake for 8-10 minutes.
Let cool for 5+ minutes before moving to allow cookie to ‘set’.
Makes approx. 25 small cookies

(about a 1/4 cup will do, or if you want more, increase peanut butter by a tablespoon)
